Another Flagstaff restaurant has joined the growing list of establishments offering gluten free fare. Beaver Street Brewery General Manager Mike Darby and Head Chef Roseann Clark recently attended a meeting of the Flagstaff Celiac Support Group. The pair brought salads and gluten free pizzas to be sampled by the group.
“We’ve been working closely with our staff to educate them on the challenges of serving gluten free food,” said Darby. He and Clark explained that they spent a great deal of time working on the pizza dough recipe, wanting to create something delicious rather than just coming up something passable.
One of the members of the group said the pizza was the best they had tasted since going gluten free.
Beaver Street Brewery and Whistle Stop Cafe is a popular Flagstaff restaurant serving fondus, salads, pizzas and sandwiches. Hand crafted ales and lagers are brewed on the premises.
